Quinoa, Chicken, Ginger and Vegetable Soup.

Grocery list for Soup:

Quinoa – 1 cup
chicken – 1 chicken (can buy precooked at superstore)
Ginger – 1 small – medium root (depending on your like/love of ginger)
Carrots – 2 medium carrots
Corn (basically any vegetables you like)
rosemary (1 tbp) or to taste
pepper (1/2 tsbp) or to taste

Removed the chicken meat from the chicken and cut into small pieces or shred.

In a large stock pot, boil the remaining chicken/bones for 2 ½ hrs. You may need to add water as you go.

Strain the water to get all the bones, remaining chicken and fat out.

With the broth that is left bring to a boil and add the quinoa, rosemary and pepper.

Shred the ginger and carrots (or cut into tiny pieces)

Add chicken, ginger, carrots and the corn (or whatever vegetables you like) to the broth and simmer for 1 hr.
