In a hurry but still want something healthy and nutritious? Try Jen’s express black bean soup.
Makes approximately 4 servings
1 tsp Olive Oil
1- 1-pint container fresh salsa
1- 16 oz can re-fried beans
1- 15 oz can black beans, drained
1 -14.5 oz can low-sodium chicken or vegetable broth
¼ cup fresh cilantro
4 Tbsp of non-fat sour cream
Directions: Heat the oil in a saucepan or large pot over medium heat. Add the salsa and cook, stirring occasionally for 4 minutes. Add the refried beans, black beans and broth and bring to a simmer. Cook until warmed through, about 5 minutes. Divide into four equal servings. Top each serving with 1 Tbsp of non-fat sour cream and with some of the remaining salsa and the sour cream and cilantro (if using).
You can also add whatever veggies you like for added nutrients. Enjoy and thanks for sharing Jen.
