Terri’s Homemade Quinoa Soup Recipe

Hi everyone, a co-worker of mine shared her yummy recipe for Quinoa soup and I thought i would share with all of you.
Enjoy!

2 med onions – chopped
4 cloves garlic – minced
4 carrots – chopped
1 yellow squash – diced
1 turnip – diced
1 can black beans
1 can diced tomatoes
5 cups vegetable broth
Salt & pepper to taste
I also added in Thyme, sage and rosemary
2 cups cooked quinoa

Cook quinoa, just follow the directions on the package and put aside. Heat 2 Tbsp olive oil in stock pot. Add onions and cook until clear. Add garlic and veggies and cook for about 5 mins to soften.

Add diced tomatoes, broth, beans and seasonings. Bring to a boil then simmer for about 30 mins until veggies are tender. Add quinoa and heat for a few mins. Serve and enjoy.
